How do I delete an employee?

You can delete an employee and all associated data (including punches) in the Console. Go to Settings -> Users, and select the user. Scroll to the bottom, and expand the red Danger Zone section. Click the red Delete User button. Then in the confirmation dialog, type "DELETE" in all caps, and finally click "Delete".
